Pumpkin Streusel Muffins

Ingredients
- Muffins
- 1¾ cups flour
- 4 Tbsp SACO Cultured Buttermilk Blend
- ½ cup sugar
- 1 Tbsp baking powder
- 1 tsp cinnamon
- ½ tsp salt
- ½ tsp nutmeg
- 1 egg
- ½ cup water
- ⅓ cup vegetable oil
- 1 cup canned pumpkin
- 8 oz cream cheese, cut into
- 12 even cubes
- Streussel
- ¼ cup brown sugar
- ¼ cup pecans, chopped
- 1 tsp cinnamon
- 1 Tbsp butter
Instructions
- Muffins
- Preheat oven to 400°F.
- In a large mixing bowl combine the first seven ingredients.
- In a separate bowl beat the eggs; add water, oil and pumpkin.
- Stir into dry ingredients until moistened.
- Fill 12 greased muffin cups ⅔ full; place a square of cream cheese in the center of each cup.
- Top with remaining batter.
- Sprinkle with streusel.
- Bake for 18 to 22 minutes or until done.
- Streussel
- In a small bowl combine brown sugar, pecans and cinnamon in a small bowl.
- Cut in butter until crumbly.
- Sprinkle over batter.
