Creamy Taco Soup

Ingredients
- Soup
- 5 cups tomato juice
- 1 lb ground beef
- ½ tsp garlic powder
- 2 Tbsp chili powder
- 2 eggs
- 2 tsp salt
- 1 tsp black pepper
- 3 cups diced tomatoes
- 5 small hot banana peppers, diced
- 5 large mild chili peppers, diced
- 1 large onion, diced
- 2 cups warm water
- 8 Tbsp SACO Cultured Buttermilk Blend
- Toppings
- 2 cups nacho corn chips, crumbled
- 2 cups sharp cheddar cheese, shredded
Instructions
- In a large sauce pan, bring the tomato juice to a boil.
- In a medium bowl combine the ground beef, garlic and chili powder, eggs, salt and pepper.
- Mix well and roll into one inch meat balls.
- Drop them into the tomato juice.
- Add the peppers and onion.
- Boil for 15 minutes.
- Combine the warm water with Saco Cultured Buttermilk Blend.
- Add to soup.
- Reduce heat to simmer and stir every 10 minutes for 1½ hours.
- Pour into serving bowls and top with crumbled nacho corn chips and cheese.
