Buttermilk Yellow Cake For Two

Ingredients
- Cake
- 1¼ cups all-purpose flour
- 1 cup granulated sugar
- ½ tsp baking powder
- ¼ tsp baking soda
- 3 Tbsp SACO Cultured Buttermilk Blend
- ½ tsp salt
- ⅓ cup solid vegetable shortening
- 1 egg
- 1 tsp vanilla extract
- ¾ cup water
- Coconut Broiled Topping
- 2 Tbsp butter or margarine, softened
- ⅓ cup brown sugar
- ¼ cup nuts, chopped
- ½ cup flaked coconut
- 1½ Tbsp milk
Instructions
- Cake
- Have ingredients at room temperature.
- Preheat oven to 350°F.
- Grease and flour one 8 or 9-inch square baking pan.
- In large mixing bowl sift together dry ingredients.
- Add remaining ingredients and blend ½ minute on low speed, scraping bowl constantly.
- Beat 3 minutes on high speed, scraping bowl occasionally.
- Pour into pan.
- Bake 30 to 35 minutes, or until wooden toothpick tests done.
- Top warm cake with Coconut Broiled Topping and broil as directed.
- Coconut Broiled Topping
- In medium mixing bowl thoroughly blend together butter, brown sugar, nuts and coconut.
- Stir in milk.
- Spread mixture evenly over warm cake.
- Set oven control at broil or 550°F.
- Place cake 5 inches from heat and broil about 3 minutes, or until topping bubbles and browns slightly. (Watch carefully—mixture burns easily.)
- Tops one 9-inch square cake.
