Favorite Cocoa Cake

Ingredients
- Cake
- 1 cup butter or margarine
- 3 cups brown sugar, packed
- 4 eggs
- 2 tsp vanilla extract
- 2⅔ cups all-purpose flour
- ¾ cup SACO Premium Cocoa
- 1 Tbsp baking soda
- ½ tsp salt
- 1⅓ cup sour cream
- 1⅓ cup water, boiling
- Frosting
- ½ cup butter
- 3 oz chocolate square, unsweetened
- 3 oz chocolate square, semisweet
- 6 cups powdered sugar
- 1 cup sour cream
- 2 tsp vanilla extract
Instructions
- Cake
- Preheat oven to 350°F.
- Grease and flour 2-9 inch round baking pans.
- In a large mixing bowl, cream butter and brown sugar.
- Add eggs, one at a time, beating well after each addition.
- Beat on high speed until light and fluffy.
- Blend in vanilla. In a separate bowl combine flour, Saco Premium Baking Cocoa, baking soda and salt; add alternately with sour cream to creamed mixture.
- Mix on low speed just until combined.
- Stir in water until blended.
- Pour into prepared cake pans.
- Bake for 30-35 minutes or until inserted toothpick comes out clean.
- Frosting
- In a medium saucepan, melt butter and chocolate over low heat, stirring often.
- Cool slightly. In a mixing bowl, combine powdered sugar, sour cream and vanilla.
- Add chocolate mixture and beat until smooth.
- Spread frosting on the cooled cake.
