Chocolate & Peanut Butter Lover’s Cake

- Cake
- 2¼ cups all-purpose flour
- ¼ cup SACO Cultured Buttermilk Blend
- 1½ cups brown sugar
- ¾ cup creamy peanut butter
- ¼ cup butter or margarine, softened
- 1 tsp baking powder
- ½ tsp baking soda
- 1 cup water
- 1 tsp vanilla extract
- 3 eggs
- ⅓ cup SACO Premium Cocoa
- ¾ cup SACO Chocolate CHUNKS Reese’s mini P.B. Cups (optional)
- Peanut Butter Icing
- 1 Tbsp creamy peanut butter
- ¾ cup powdered sugar
- 1½ Tbsp warm water
- Cake
- Preheat oven to 350°F.
- Grease one bundt pan.
- In large mixing bowl blend together flour, Buttermilk Blend, brown sugar, peanut butter and butter until crumbly.
- Measure out one cup of mixture and set aside.
- To remaining mixture add baking powder, baking soda, water, vanilla, eggs and cocoa.
- Beat together 3 minutes at medium speed.
- Stir in CHUNKS.
- Pour ½ the batter into prepared pan.
- Top with reserved 1 cup of crumbs.
- Place remaining batter over sprinkled crumbs.
- Bake 45 minutes, or until wooden toothpick tests done.
- Cool completely.
- Cover with Peanut Butter Icing.
- Garnish with Reese’s Peanut Butter Cups, if desired.
- Peanut Butter Icing
- Blend ingredients together until smooth.
- Spread on top of cake as directed.
