Favorite Cocoa Cake

1. Cake:


  • 1 cup butter or margarine
  • 3 cups brown sugar, packed
  • 4 eggs
  • 2 tsp vanilla extract
  • 2 2/3 cups all-purpose flour
  • 3/4 cup SACO Premium Cocoa
  • 1 Tbsp baking soda
  • 1/2 tsp salt
  • 1 1/3 cup sour cream
  • 1 1/3 cup water, boiling


Preheat oven to 350°F. Grease and flour 2-9 inch round baking pans. In a large mixing bowl, cream butter and brown sugar. Add eggs, one at a time, beating well after each addition. Beat on high speed until light and fluffy. Blend in vanilla. In a separate bowl combine flour, Saco Premium Baking Cocoa, baking soda and salt; add alternately with sour cream to creamed mixture. Mix on low speed just until combined. Stir in water until blended. Pour into prepared cake pans. Bake for 30-35 minutes or until inserted toothpick comes out clean.

2. Frosting:


  • 1/2 cup butter
  • 3 oz chocolate square, unsweetened
  • 3 oz chocolate square, semisweet
  • 6 cups powdered sugar
  • 1 cup sour cream
  • 2 tsp vanilla extract


In a medium saucepan, melt butter and chocolate over low heat, stirring often. Cool slightly. In a mixing bowl, combine powdered sugar, sour cream and vanilla. Add chocolate mixture and beat until smooth. Spread frosting on the cooled cake.
