Pink Cloud Chocolate Cake

Ingredients
- Cake
- 1 cup butter
- 2 cups granulated sugar
- 3 Tbsp oil
- 2 tsp vanilla
- 3 eggs
- 2 egg yolks
- 2¼ cup SACO Premium Cocoa, sifted
- 1½ tsp baking soda
- ½ tsp salt
- ½ cup SACO Cultured Buttermilk Blend
- 2 cups water
- Pink Cloud Frosting
- 1 cup strawberry jelly
- 2 egg whites, unbeaten dash salt
Instructions
- Cake
- Preheat oven to 350°F.
- Grease and flour 3- 9” round cake pans.
- In large mixer bowl, cream together butter and sugar; beat until light and fluffy.
- Blend in oil and vanilla.
- Add eggs and egg yolks one at a time, beating well after each.
- In a separate bowl sift together the remaining dry ingredients.
- Add to creamed mixture alternately with water, beating well after each addition.
- Beat at medium speed one minute more.
- Bake in prepared pans 20-25 minutes.
- Cool for 10 minutes and remove from pans.
- Allow to cool completely.
- Spread strawberry preserves between layers.
- Frost with pink cloud frosting.
- Pink Cloud Frosting
- Combine all ingredients in a double boiler; cook, beating constantly with electric hand mixer for four minutes.
- Remove from heat; continue beating until mixture stands in peaks.
