Question: What exactly do the various kosher certifications mean?

Answer: Two kosher certifications are used on food products today. They are O.U. and O.U.D. O.U.D. means that the product either contains dairy products, or is made on equipment that also produces dairy products. This equipment can, however, be cleaned after dairy products are produced to the Jewish Orthodox specifications (basically to the point where no possible dairy residue is still on the equipment), and be classified as O.U. O.U. means that the product contains no meat or dairy products, and/or is not produced on the same equipment as meat or dairy products (unless that equipment has been cleaned to the Jewish Orthodox specifications after meat or dairy is produced).

The Jewish community, in general, does not eat milk and meat products together, which is why these certifications have been entered into the food packaging industry.

Parve is another certification you may have heard about, but this is basically no longer used. Parve has the same meaning as the O.U. certification.
