Cold Beet Borscht Soup
Serves: 8 servings
 
Ingredients
  • Soup
  • 30 oz canned beets, drained
  • 1½ cups beef broth
  • 4 Tbsp SACO Cultured Buttermilk Blend
  • 2 tsp dried dill weed
  • ½ tsp Worcestershire sauce
  • ½ tsp black pepper
  • 2 cups vegetable juice
  • 1½ tsp onion powder
  • 2 drops hot pepper sauce
  • 1 tsp garlic, minced
  • 3 Tbsp lemon juice
  • 1 cup water
  • Garnish
  • ½ cup sour cream
Instructions
  1. Combine beets, beef broth, Saco Cultured Buttermilk Blend and spices in a blender and blend until smooth; gradually add lemon juice and water and blend until smooth.
  2. Chill.
  3. Serve in a bowl with one Tablespoon sour cream as a garnish.
