Whole Wheat Buttermilk Muffins

Ingredients
  • 1 cup all-purpose flour
  • ¼ cup granulated sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ cup SACO Cultured Buttermilk Blend
  • 1 tsp salt
  • 1 cup whole wheat flour
  • 1 egg
  • 1 cup water
  • ¼ cup vegetable oil
Instructions
  1. Preheat oven to 400°F.
  2. Grease bottoms of 12 medium muffin cups.
  3. In medium mixing bowl sift together all-purpose flour, sugar, baking powder, baking soda, Buttermilk Blend and salt.
  4. Stir in whole wheat flour.
  5. Set aside.
  6. In large mixing bowl beat egg.
  7. Stir in water and oil.
  8. Add dry ingredients to liquid mixture, stirring just until flour is moistened.
  9. Do not overbeat.
  10. Fill prepared muffin cups ⅔ full.
  11. Bake 20 to 25 minutes.
  12. Immediately remove from pan.
