Whole Wheat Buttermilk Muffins

Serves: 12 muffins
- 1 cup all-purpose flour
- ¼ cup granulated sugar
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ cup SACO Cultured Buttermilk Blend
- 1 tsp salt
- 1 cup whole wheat flour
- 1 egg
- 1 cup water
- ¼ cup vegetable oil
- Preheat oven to 400°F.
- Grease bottoms of 12 medium muffin cups.
- In medium mixing bowl sift together all-purpose flour, sugar, baking powder, baking soda, Buttermilk Blend and salt.
- Stir in whole wheat flour.
- Set aside.
- In large mixing bowl beat egg.
- Stir in water and oil.
- Add dry ingredients to liquid mixture, stirring just until flour is moistened.
- Do not overbeat.
- Fill prepared muffin cups ⅔ full.
- Bake 20 to 25 minutes.
- Immediately remove from pan.
