Tropical Pound Cake

Ingredients
  • Cake
  • 2 cups sugar
  • 1 cup butter
  • 4 eggs
  • 1 tsp vanilla
  • 1 Tbsp rum extract
  • 3 cups flour
  • ¼ cup SACO Cultured Buttermilk Blend
  • 1 tsp baking powder
  • ¼ tsp salt
  • 1 cup crushed pineapple with juice
  • Icing
  • ½ cup powdered sugar
  • ½ tsp rum extract
  • 2 Tbsp milk
  • 1 cup toasted coconut
Instructions
  1. Cake
  2. Preheat oven to 350°F.
  3. Grease and flour a 10 inch tube pan.
  4. Beat sugar, butter, eggs, vanilla and rum extract.
  5. Stir in flour, salt, baking powder and Saco Cultured Buttermilk Blend alternately with crushed pineapple.
  6. Pour into pan.
  7. Bake for 1 hour and 10 minutes.
  8. Cool in pan for 20 minutes. Remove from pan and cool completely.
  9. Icing
  10. Make and icing from powdered sugar, rum extract and milk.
  11. Drizzle over cake. Sprinkle with toasted coconut.
