The Absolute Apricot Orange Nut Bread

  • 2 cups dried apricots, chopped
  • ½ cup boiling water
  • ½ cup orange juice
  • 4 Tbsp butter or margarine, softened
  • 1½ cups granulated sugar
  • 2 eggs
  • 2½ cups all-purpose flour
  • ½ cup SACO Mix’n Drink Instant Skim Milk
  • 2 tsp baking soda
  • ¼ tsp salt 1 cup chopped nuts
  1. Preheat oven to 325°F.
  2. Grease one loaf pan.
  3. Cut apricots into small pieces.
  4. In small mixing bowl combine boiling water and orange juice; add apricots and let stand 15 minutes.  In large mixing bowl cream together butter and sugar.
  5. Add eggs and beat until smooth.
  6. In medium mixing bowl sift together flour, SACO Mix’n Drink powder, baking soda, and salt.
  7. Stir in chopped nuts.
  8. Combine moist and dry ingredients.
  9. Pour into prepared pan and bake 60 to 65 minutes, or until wooden toothpick tests done.
