Sweet Potatoe Curry Bisque
Serves: 4 servings
 
Ingredients
  • ½ cup onions, chopped
  • ¼ cup sweet red peppers, chopped
  • 1 Tbsp butter
  • 1 cup chicken stock
  • 29 oz canned sweet potatoes, cut & drained
  • ⅛ tsp black pepper
  • 2 Tbsp sugar
  • 2 tsp curry
  • 4 Tbsp SACO Cultured Buttermilk Blend
  • 1 Tbsp flour
  • 1 cup water
Instructions
  1. In a large skillet, cook onions and peppers in butter over medium heat.
  2. Add stock, sweet potatoes and spices.
  3. Cook until vegetables are tender.
  4. In a medium bowl, mix buttermilk with flour and mix well.
  5. Add to sweet potato mixture.
  6. Add water.
  7. Heat until boil, reduce heat and simmer 10 minutes.
  8. Using a hand mixer or blender, puree mixture until very smooth.
  9. Serve with a dollop of sour cream if desired.
