Sweet Potato Soup
Serves: 4 servings
  • 1 large sweet potato
  • 1 cup SACO Cultured Buttermilk Blend
  • 3 oz cheddar cheese
  • 1 cup chicken broth
  • 1 cup half and half
  • ½ cup sour cream
  • ½ cup bacon bits
  • ¼ cup green onions
  1. Cook sweet potato, drain and mash.
  2. To this mixture add Saco Buttermilk Blend, cheese, broth and cream.
  3. Bring to a slow boil.
  4. Top with bacon bits, onions and a dollop of sour cream.
  5. Serve with bread or crackers.
