Quick Mix Buttermilk Easy Chicken Pie

Serves: 6 servings
  • 1½ cups cooked chicken, cubed
  • 10 oz frozen asparagus or broccoli,
  • ¾ cup green onions, sliced
  • 6 oz swiss cheese, shredded
  • ½ tsp salt
  • ½ tsp pepper
  • 1⅓ cups milk
  • 3 eggs
  • ¾ cup Buttermilk Quick Mix*
  1. Preheat oven to 400°F.
  2. Grease one 10-inch round pie pan or one 9-inch square pan.
  3. Sprinkle chicken, asparagus or broccoli, onions and cheese in pan.
  4. Beat remaining ingredients until smooth, about 1 minute.
  5. Pour into pan.
  6. Bake until golden brown and knife, inserted in center, comes out clean (30 to 35 minutes).
  7. Cool 5 minutes.
  8. Refrigerate any remaining pie.
  9. Variation: Substitute 1½ cups cubed, cooked turkey or ham for the chicken.
  10. Eliminate salt if using ham.
