Clam Chowder, Manhattan, Montana Style w/ Cheddar & Green Onion Angel Biscuits

Ingredients
  • Chowder
  • 1 lb bacon sliced and cut into
  • ¼” pieces
  • 1 onion, chopped
  • 4 celery stalks, chopped
  • 2 bunches green onions, chopped
  • 32 oz clam juice
  • 36 oz clams in broth, chopped
  • 1¼ cups SACO Cultured Buttermilk Blend
  • ½ cup flour
  • ½ cup butter, melted
  • 3 potatoes, chopped to
  • ½” size
  • 1 tsp garlic powder
  • ½ tsp celery seed
  • 1 tsp rubbed thyme
  • ⅓ cup SACO Mix’n Drink Instant Skim Milk
  • 1 cup water
  • 2 cups whipping cream
  • Angel biscuits
  • ¼ cup warm water
  • 1 pkg dry yeast
  • ¼ cup SACO Cultured Buttermilk Blend
  • 1 tsp garlic powder
  • 3 cups flour
  • 1 Tbsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • ½ cup butter
  • 2 cups cheddar cheese, shredded
  • ½ cup green onions, chopped
  • 1 cup water
Instructions
  1. Chowder
  2. In a large pan cut up bacon in to pieces.
  3. Add onions, celery and green onions.
  4. Saute until limp but not brown, about 4 min.
  5. Stir in clam juice and clams with broth; heat gently.
  6. In a separate pan make roux with the Saco Cultured Buttermilk Blend, flour and melted butter until golden brown over low heat.
  7. Stir 2 cups of heated broth slowly into roux until thickened, then whisk back into soup pot.
  8. Add potatoes, garlic celery seed and thyme.
  9. Combine the Mix’n Drink with the water and whipping cream.
  10. Add to soup mixture.
  11. Heat gently.
  12. Angel Biscuits
  13. Preheat oven to 425°F.
  14. Combine warm water and yeast; set aside.
  15. Combine first six ingredients.
  16. Cut in butter, stir in cheese and green onions.
  17. Add yeast mixture and 1 cup of water.
  18. Stir to soft dough.
  19. Drop biscuits of desired size on greased baking sheet.
  20. Bake for about 15 minutes.

 

CiCi’s Chocolate Pudding

CiCi’s Chocolate Pudding
Serves: 4 servings
 
Ingredients
  • ¼ cup granulated sugar
  • 3 Tbsp SACO Premium Cocoa
  • 3 Tbsp cornstarch
  • 10 Tbsp SACO Mix’n Drink Instant Skim Milk
  • 2 cups water
  • 1 tsp vanilla extract Ground cinnamon or orange zest
Instructions
  1. In 4-cup glass measuring cup combine sugar, cocoa, cornstarch and Mix ‘n Drink.
  2. Whisk to blend.
  3. Slowly whisk in water.
  4. Microwave on high 5 to 6 minutes, stirring after every 2 minutes, or until mixture begins to boil.
  5. Stir in vanilla.
  6. Pour into 4 custard cups.
  7. Sprinkle top with cinnamon or orange zest to taste.
  8. Press plastic wrap onto surface (to avoid skin formation).
  9. Refrigerate.Note: Can make on stovetop if preferred by placing ingredients as directed into saucepan, and stirring until pudding boils in pan.
  10. Add vanilla, pour into custard cups, and proceed as directed above.

Zippy Potato Soup

Zippy Potato Soup
Serves: 6 cups
 
Ingredients
  • ¼ cup onion, chopped
  • 4 cups water
  • 2 cups raw potato, diced
  • 1½ cups SACO Mix’n Drink Instant Skim Milk
  • 2 Tbsp SACO Cultured Buttermilk Blend
  • 3 Tbsp all-purpose flour
  • 1 cup cooked vegetables
  • 1 Tbsp fresh parsley*, chopped
  • 1 Tbsp fresh thyme*, chopped Salt-free seasonings of your choice
Instructions
  1. In a large saucepan, coated with non-stick cooking spray, sauté onion over very low heat until tender.
  2. Add 2 cups water and potatoes.
  3. Cover and boil gently for 20 minutes, or until potatoes are tender.
  4. In medium mixing bowl combine Mix ‘n Drink, Buttermilk Blend and flour.
  5. Add remaining 2 cups water, stirring well.
  6. Add to potato mixture.
  7. Cook over medium heat, stirring constantly until mixture comes to a simmer and thickens.
  8. Add vegetables (if using frozen, mixed vegetables, simmer before adding, just until done).
  9. Stir in parsley and thyme.
  10. Season lightly to taste with Vege-sal, Mrs. Dash, or other salt-free salt substitutes.
  11. Note: for a creamy, smooth soup, whirl pre-cooked vegetables in blender with ½ cup water before adding to soup.
  12. *When using dry herbs decrease amounts by half.

Ingredients
  • 1⅓ cups SACO Mix’n Drink Instant Skim Milk
  • 3 cups water
  • ½ cup liquid buttermilk
Instructions
  1. In one-quart pitcher, mix together the Mix’n Drink powder and water.
  2. Add liquid buttermilk and stir until smooth.
  3. Allow to clabber at room temperature overnight, then refrigerate.

 

White Chocolate Mixed Nut Clusters

White Chocolate Mixed Nut Clusters

Ingredients
  • 8 oz SACO White Dolci Frutta
  • 2 Tbsp creamy peanut butter
  • 1 cup mixed nuts with peanuts
  • 1¼ cups Rice Krispies cereal
  • 1 cup mini marshmallows
Instructions
  1. Melt White Dolci frutta in microwave on half power according to the package directions; stir in peanut butter.
  2. To the melted mixture add the mixed nuts with peanuts, Rice Krispies cereal, and mini marshmallows (see note below).
  3. Drop by rounded teaspoons on waxed paper and let harden.
  4. Note: Work quickly and make sure chocolate is cooled enough that it does not melt the marshmallows.
  5. If the marshmallows melt, they will change the consistency of the chocolate.
  6. Add the cereal and nuts first to cool the chocolate, then add the marshmallows.

 

Whipped Topping

Ingredients
  • ⅓ cup ice cold water
  • ½ cup SACO Mix’n Drink Instant Ski
  • ¼ cup powdered sugar
  • ½ tsp vanilla extract
  • 3 Tbsp lemon juice
Instructions
  1. Place ice water in a one-quart mixing bowl.
  2. Add Mix’n Drink.
  3. Beat with rotary beater, at high speed, until mixture stands in soft peaks.
  4. (Chill beaters and bowl for best results) Add sugar, vanilla and lemon juice.
  5. Continue beating until quite firm.
  6. Chill and use as you would whipped cream as a topping on fruit, gelatin desserts, shortcake, puddings, or other desserts.
  7. This topping is also good folded into cooked salad dressings for fruit salads.
  8. Use the topping soon after whipping.

Ingredients
  • 2 cups dried apricots, chopped
  • ½ cup boiling water
  • ½ cup orange juice
  • 4 Tbsp butter or margarine, softened
  • 1½ cups granulated sugar
  • 2 eggs
  • 2½ cups all-purpose flour
  • ½ cup SACO Mix’n Drink Instant Skim Milk
  • 2 tsp baking soda
  • ¼ tsp salt 1 cup chopped nuts
Instructions
  1. Preheat oven to 325°F.
  2. Grease one loaf pan.
  3. Cut apricots into small pieces.
  4. In small mixing bowl combine boiling water and orange juice; add apricots and let stand 15 minutes.  In large mixing bowl cream together butter and sugar.
  5. Add eggs and beat until smooth.
  6. In medium mixing bowl sift together flour, SACO Mix’n Drink powder, baking soda, and salt.
  7. Stir in chopped nuts.
  8. Combine moist and dry ingredients.
  9. Pour into prepared pan and bake 60 to 65 minutes, or until wooden toothpick tests done.

Ingredients
  • 2 Tbsp butter or margarine
  • 1 medium onion, chopped
  • 1 medium carrot, chopped
  • ¼ tsp thyme leaves
  • 28 oz canned tomatoes (3 cups if fresh)
  • 2 cups chicken broth
  • 1 Tbsp all-purpose flour
  • ½ cup SACO Mix’n Drink Instant Skim Milk
  • 1 cup water
  • 1 tsp salt
  • ⅛ tsp black pepper
Instructions
  1. In large saucepan melt butter.
  2. Add onion, carrot and thyme; cook 5 minutes.
  3. Add tomatoes and chicken broth.
  4. Cover and simmer 30 minutes, stirring occasionally.
  5. Puree.
  6. In small mixing bowl blend together flour, SACO Mix’n Drink and water; stir into soup.
  7. Add salt and pepper and cook, stirring frequently, until mixture comes to a boil.
  8. Serve immediately.
  9. Variation: In place of thyme, use rosemary & thyme mixture, or use fresh-chopped basil.
  10. Note: If using fresh tomatoes, plunge into boiling water and peel first.

Ingredients
  • 1 cup frozen vanilla yogurt
  • ½ cup orange juice
  • ¼ cup fruit of choice
  • ¼ cup SACO Mix’n Drink Instant Ski
Instructions
  1. Blend all ingredients together to desired consistency and pour into a large glass.
  2. For delicious variations add:  granola, wheat germ or nuts, chocolate chips, coconut, or select different flavors of yogurt or juice.
  3. This makes a wonderful addition to break or brunch; a terrific after-school snack, or a warm-weather pick-me-up.

Ingredients
  • 6 medium potatoes
  • 1 medium onion, sliced thin
  • 3 Tbsp butter or margarine
  • 3 Tbsp all-purpose flour
  • 1 tsp salt
  • ⅛ tsp black pepper
  • 1 cup SACO Mix’n Drink Instant Skim Milk
  • 2 cups water
  • 1 Tbsp butter or margarine
  • 1½ cups finely chopped ham
Instructions
  1. Preheat oven to 350°F.
  2. Grease one 2-quart casserole dish.
  3. Pare and thinly slice potatoes.
  4. Melt 3 Tbsp butter over low heat.
  5. Blend in flour, salt and pepper.
  6. Cook until mixture is smooth and bubbly; remove from heat.
  7. Stir in SACO Mix’n Drink powder and water.
  8. Heat to boiling, stirring constantly.
  9. Arrange ⅓ potatoes in prepared casserole dish.
  10. Sprinkle ½ the onion and ham over potatoes.
  11. Pour ⅓ of the milk mixture over all.
  12. Repeat layers.
  13. Dot top with 1 Tbsp butter.
  14. Cover and bake 30 minutes.
  15. Uncover and bake until potatoes are tender, 60 to 70 minutes longer.
  16. Let stand 5 to 10 minutes before serving.
  17. Variations: Adding ham, chopped into cubes, and/or shredded cheese makes this a delicious main dish. Note: This dish can be prepared ahead of time and reheated with delicious results.
