Easy-Bake Chicken
- ½ cup SACO Cultured Buttermilk Blend
- 2 cups water
- 2 cups all-purpose flour
- ⅛ tsp red pepper (or to taste)
- 1 tsp tarragon
- 1 clove garlic black pepper - to taste
- 3 lbs chicken
- Preheat oven to 450° F.
- Reconstitute Buttermilk Blend with water.
- In separate mixing bowl stir together flour and spices.
- Dip chicken into buttermilk mixture, then roll into flour mixture.
- Place chicken in cake pan or on broiler pan, skin-side down.
- Bake 15 minutes.
- Turn oven down to 325°F and turn chicken over.
- Bake an additional 45 minutes. Optional Method (Fried):
- Using same batter recipe, but put 1 cup of vegetable oil in bottom of cake pan.
- Put pan with oil in oven for about 5 minutes, getting oil hot.
- Place chicken in pan and follow the same cooking instructions as above.
- Variations:
- Be creative with your spices.
- Add things you like for a zesty and wonderful taste sensation, like oregano, basil, or seasoning salt, or really spice things up with some chili powder, cayenne, or whatever your taste buds are calling for!

Lemony Apricot Pound Cake
- Cake
- 2½ cups flour
- ¼ cup SACO Cultured Buttermilk Blend
- ½ tsp salt
- ½ tsp baking soda
- ½ cup ground almonds
- 1 cup butter, softened
- 2½ cups sugar
- 4 eggs
- 1 tsp lemon extract
- 1 tsp almond extract
- ½ cup apricot nectar
- 1 cup sour cream
- Filling
- 12 oz apricot preserves
- 4 Tbsp lemon juice
- Cake
- Preheat oven to 325°F.
- Grease and flour 2 6-cup bundt pans or 2 loaf pans.
- In a large bowl stir together flour, Saco Cultured Buttermilk Blend, salt, baking soda, and ground almonds; set aside.
- In a separate bowl cream butter and sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition.
- Mix in lemon extract, almond extract, and apricot nectar.
- Add ⅓ cup sour cream with ⅓ cup flour mixture; mixing well after each addition; repeat twice until all flour mixture and sour cream is used.
- Divide batter into prepared pans.
- Bake 55-65 minutes or until toothpick inserted in middle comes out clean.
- Cool in pans 10 minutes before inverting onto wire rack to cool.
- Filling
- While loaves are still warm, heat apricot preserves and lemon juice in small saucepan until preserves are melted.
- Spoon 3 to 4 tablespoons apricot mixture carefully over each loaf.
- Reserve remainder to reheat and spoon over servings of cake, if desired.

- Pound Cake
- Preheat oven to 350°F.
- Grease and flour 12-cup bundt pan.
- Sift together first five ingredients.
- In a separate bowl beat butter until smooth.
- Add sugar and beat until light and fluffy.
- In a small bowl beat eggs with lemon extract.
- Gradually add egg mixture to butter/sugar mixture.
- Add lemon zest.
- Combine lemon and orange juice.
- Alternate adding the dry ingredients with the lemon/orange juice.
- Pour into prepared pan.
- Bake 50-60 minutes or until toothpick comes out clean and cake starts pulling away from sides of pan.
- Let cool for 5 minutes.
- Turn out onto cooling rack and cool completely.
- Cut the cake into three layers.
- Stir the remaining lemon curd to make it more spreadable.
- Spread half of the lemon curd on the bottom cake layer.
- Top with middle cake layer.
- Spread remaining lemon curd on second cake layer.
- Top with cake top.
- Glaze
- Heat lemon curd with water until dissolved.
- Brush Glaze on cake once assembled.
Saco Italian Pot Pie
- Filling
- 4 Sweet or Mild Italian sausage
- 4 Tbsp olive oil, divided
- 1 tsp garlic, chopped
- ½ tsp fresh basil, chopped
- 3 zucchini, sliced
- 2 yellow squash, sliced
- 1 onion, chopped
- 2 14.5 oz cans diced tomatoes, drained
- 6 oz can tomato paste
- 8 oz mozzarella cheese, shredded
- Biscuit Topping
- 1¾ cups flour
- ¼ tsp dried basil
- 3 Tbsp SACO Cultured Buttermilk Blend
- 2½ tsp baking powder
- ¾ tsp salt
- ⅓ cup shortening
- ¾ cup water
- 2 Tbsp butter, melted
- 3 Tbsp Parmesan cheese, grated
- Filling
- In skillet place Italian sausage and 2 Tbsp. olive oil until done.
- Cut into slices. Set aside.
- In Dutch oven heat remaining 2 Tbsp. of olive oil with garlic and basil.
- When hot, add zucchini and squash; sauté until soft.
- Add chopped onion and cook until tender.
- Drain off excess liquid.
- Add tomatoes.
- Keep stirring to avoid scorching,
- Add Italian sausage and tomato paste.
- Stir well until thickened.
- When cooked thoroughly remove from heat and pour into greased 2 quart casserole dish.
- Top with Mozzarella cheese.
- Prepare Biscuit Topping.
- Biscuit Topping
- Mix first five ingredients, cut in shortening with pastry blender.
- Pour in water and mix.
- Knead on a floured surface until workable.
- Roll out biscuit dough to slightly larger than baking dish.
- Cut into squares or rectangles and arrange to fit on top of baking dish.
- Place on top of pie filling.
- Brush top with melted butter and sprinkle with grated Parmesan cheese.
- Bake at 450°F for 10-12 minutes or until biscuit top is browned.

- 3 cups Colby Monterey Jack cheese

- Place main ingredients in sauce pan over medium heat.
